There are alot of ways to document your requirement. You can use word documents (or any other format, [[openoffice -> http://www.openoffice.org]] for instance). You can even store these documents in a [[Repository]], this way you can control different versions. It is also possible to use a dedicated tool for requirements mamanagement like:
